Same reason depictions of Buddha in China are of a well fed Chinese man.
The founder of Buddhism actually had short hair and a short beard most of his adult life, with coffee coloured skin.
The founder of Buddhism? You mean the popular Buddha known to the west? Buddha is a generic term, there are many Buddhas, Siddharth is just known more than the others.

There are 28 buddhas, if I recall correctly.
Jesus did not carry a precise image of his own, that was not his aim...if he did carry an image of being white than his message would not be easily understood and accepted by those of other race than his own, what made Jesus unique is understandable is the fact that he appealed to all humankind with the messages of love, faith and hope he carried within him, and than only could he be accepted by those other than his own society.

why such an assumption? perhaps Siddhartha Gautama's beliefs were common throught that era.

Buddhism is considered a heterodox tradition among the ancient schools.
I think you should talk to these Chinese and ask them if it is Gautama. It would be very surprising if they said it was.
edit: unless you mean they have Buddha with Chinese like features, which is not odd at all, since he was from Nepal
Pictures of JC done or commissioned by white men were of a white Jesus. Are there any pictures done of him that are Mid-eastern or African in origin?
