I really can't understand why anyone would think otherwise

We're in an artificial simulation.
 
Perhaps whatever runs the simulation isn't perfect & people are able to subconsciously sense it but can't accept it.
Or perhaps part of the programming is to have most people confused.

Well, you do seem to want to solve the problem with your idea about an artificial simulation.
But why invent the argument ? Current understanding perfectly explains why we can't perceive everything.
