Religious belief isn't genetically inheritable. This individual will be whatever their beliefs make them. It's utterly irrelevant what their mother or father believe in.

Thats typically how Muslims define it. If you have iman, you are a theist. If you follow the Quran, you are Muslim, if Torah, then Jewish, if Jesus, then Christian. The details of your parents etc are only arbitrary until your personal convictions are known.
 
She's a theist under the umbrella of competing cults. She might become a Harri-Krishna and hang out at airports. Who cares? One god delusion is just as silly as any other and of no importance whatsoever.

If she believes in Islamic philosophy and theology, then she is Muslim. There are many Muslims of Jewish descent. The Palestinians, Syrian, Lebanese, and Jordanians, for example, include people of Jewish descent who have converted to Islam, many of them descend from the original 12 tribes of Israel. They are defined by their beliefs and a common culture, not their lineage.

I know a person that called himself a Jewbu (Jewish budhist) because he was practicing them both.
