If you could take a piece of steak and remove all the bactera from it and vacume seal it in a PERFECTLY sterile enviroment

Would it ever go off or would it be fresh in 10,000 years?
 
I think so. There are some stories that says people found canned meat and food preserved for over 100 years or so and ate them. The food was perfect.
 
Sterile sealing alone might not be enough as for instance ambient temperature or sun light might let the protein denature. Mind you, this should be rather slow and the meat would not go bad in the classic sense (rather lose colour and look bad). But in a dark cool place (or in a perfect vacuum) it should be fresh as fresh can be I assume.
