Cooked rice and cucumber

Why does the tast of cooked white rice taste differently when chewing after a few minutes? what causes the change?

What are e similarities and differences between taste of rice and cucumber?
 
Isnt the change in taste caused by the enzymes breaking down the food.
Thats a pretty void guess, since I swallow rice fairly quickly.
Cucumber is a bit more watery and although it does sound dodgy and stupid it tastes green. Dont ask why... it just does.
 
Could you explain further about starch digestion by saliva in the mouth?
Also does the taste of cucumber actually remain the same even after a few mintues due to no starch content?

You can do the same with a saltine cracker. Put it into your mouth and let it soak. It'll turn sweet. I don't remember if it makes a difference if it's salted side down or up.
 
There is an enzyme in the saliva called salivary amylase that breaks alpha-1,4 bonds between glucose monomers of starch. Crackers, breads, and other starchy foods will begin to taste sweet as the amylase works on the starch molecules and breaks them into glucose.
