Technically, only the luminescent wood ears on the trees are fungus. The gourds emitting the glowing pollen are actually outgrowths of the trees roots (the trees anchor the whole ecosystem), and the glowing rushes are a kind of berry plant with phosphorescent juices inside.
Oh, and the water lotuses have glowing "pollen clusters" in the middle, but the petals simply reflect.
And if I want to get real technical, the water lotuses are not even plants, they are animals that feed by imitating a flower and basking at the surface. Here's a couple of shots of one:
